What do you need to know about celiac disease, veganism and vegetarianism

Celiac disease is a permanent intolerance to gluten, a protein found in oats, wheat, spelled, khorasan wheat (usually marketed as Kamut ®), barley, rye, spelled and triticale. It is therefore necessary to exclude from your diet some of the most common foods such as bread, pasta, cookies and pizza, but also eliminate the smallest traces of gluten from the plate. The incidence of this intolerance is growing in Italy with an annual increase of about 10%. (Source: AIC)

Veganism is a philosophy of life based on the rejection of all forms of exploitation of animals (for food, clothing, entertainment or any other purpose). The word “VEGAN” is a contraction of the English word vegetarian, Italian is the same as “vegan” from the Latin vegetalis or belonging to the plant kingdom. The vegan does not use any animal products: does not eat meat (including fish and shellfish), nor of animal products (eggs, milk, honey and cheese) is not wearing fur and not using products tested on animals. To prepare a vegan meal no animal is killed, abused or exploited.

Vegetarianism, in the context of human nutrition, designate a set of different dietary practices united by the rigorous exclusion of meat from any animal. The most common vegetarian diets are based on cereals, legumes, vegetables and fruit (both fresh and dried) and, to a lesser extent, include milk, dairy products and eggs for those who use it.
